Patiswiss installs Napasol pasteurization system

Patiswiss AG has installed a LOG5 pasteurization system at its production location in Gunzgen in the canton of Solothurn developed by the machine manufacturer Napasol, which is based in Zug. The system kills off 99.99 percent of pathogenic germs such as Salmonella or E. coli in agriculturally harvested raw materials, further details of which can be found in a press release. The “globally unique” system with integrated roasting module is designed to contribute to increasing food safety and minimizing product recalls.

Patiswiss specializes in the processing and refining of nuts, while the company is also involved in supplying food producers and the gastronomic sector with semi-finished food products such as pastes and blends as well as customer-specific recipes.

The system now installed in Gunzgen works on a fully automated basis and is operated via solar power, among other energy sources. After pre-heating, it pasteurizes the raw materials, i.e. it briefly heats them to between 72 and 100 degrees Celsius. The color, taste, appearance and nutritional content of the product are retained. The system then uses the existing base temperature for roasting, which in turns helps to save energy. Depending on requirements, the raw material can then be caramelized, coated with chocolate, seasoned and further processed into semi-finished products such as pastes and creams.

Napasol supplies pasteurization and sterilization equipment for the treatment of foods with low moisture contents including nuts, seeds, herbs, spices, botanicals and dried fruits. The special process, which combines steam and vacuum elements, eliminates germs and microorganisms that can cause food to spoil. In turn, the system helps to ensure both food safety and extend the shelf life of the products.
